Banana Muffins

I love bananas and wanted to bake something that was easy and healthy at the same time. These muffins are perfect for breakfast or to just snack on. The muffins are super soft and have the perfect hint of cinnamon and nutmeg. I hope you enjoy them as much as I do. I’ll be having them for breakfast for the next couple of days!

Here is what you’ll need:

2 Bananas (Mashed)

1 Cup of Whole Wheat Flour

1/4 Cup of all Natural Cane Sugar

1 TSP Baking Soda

1 TSP Baking Powder

Salt to taste

1/4 Cup of Unsalted Butter

1 TSP Cinnamon

1/4 TSP Nutmeg

2 Brown Eggs

1/4 TSP Vanilla Extract

Cooking Spray

Preheat the oven to 350, grab two muffin tins and mixing bowls. This batter will make approximately 16 muffins. In one bowl, mix together the dry ingredients including flour, baking soda, baking powder, cinnamon, nutmeg, sugar, and salt. In a separate bowl, gather the butter, vanilla, and eggs. With an electric beater, smooth together the wet ingredients and then add in the dry. After these are beaten, pour in the mashed bananas and mix together until smooth.

Once the batter is done, pour into the greased muffin tins and bake for around 10-12 minutes or until golden brown. Let them cool and they are ready to eat!
