This time around, I wanted to come up with something sweet but can be somewhat of a healthy snack to have around break time at work or just while hanging out. I’m also a chivette so I just had to make something for a site that I love that MUCH. Anyways, these are quick and easy to make. Here is what you’ll need:
- 2 Eggs
- 2 Cups of Flour
- 1 1/2 Cups of Sugar
- Handful of fresh chives (chopped)
- 1 TSP of Baking Powder
- Salt to taste
- 1 Cup of Milk
- 3/4 Cup of Butter
- 1 TSP of Vanilla Extract
In one bowl, mix together the dry ingredients of the sugar, flour, salt, and baking powder. In a separate mixing bowl, whisk together the eggs then add in the milk, vanilla and butter. Once the wet ingredients are well mixed, add in the dry and make sure the batter is smooth. Afterwards, add in the chopped chives and use an electric mixer to stir it up.
Make sure the oven is preheated to 350 degrees and you have two sets of muffin tins greased. Pour the batter into the tins and bake for around 16 minutes. Let them cool and they are ready to eat, enjoy!
