A few months ago, I had gone to our local Strawberry Festival in Plant City. I knew I wanted to go to see Josh Turner perform and of course pick up a couple of fresh strawberry produce. When I saw that strawberry butter was being sold, I thought why not get it.
I’m glad that I have it and now use it a lot for my toast, snacks and baking. You may think it’s weird on why I’m using butter but it has more of a jam texture. This was easy to bake with and worth it. The butter can probably be found at a local farm or maybe an organic store. The cookies turned out to be crispy on the outside and soft on the inside. I think they are great for spring time since it is made with strawberries and they are good for a mid day snack!
- 2 Cups of Flour
- 3/4 Cups of Sugar
- 1 TSP of Vanilla Extract
- 1 Egg
- 1/2 Cup of Chocolate Chips
- 1 TSP of Baking Powder
- 1 Stick of Butter
- Salt to Taste
- 2 Big Tablespoonfuls of Strawberry Butter
- Pam Cooking Spray
Preheat the oven to 375 and spray the pam onto a baking pan. In one bowl, mix together the dry ingredients, flour, sugar, baking powder, and salt. In a separate mixing bowl, whisk together the eggs, butter, and vanilla. Then add in the strawberry butter into the wet ingredients. Afterwards, mix in the dry until smooth. Once smooth, add the chocolate chips and stir them in. With an ice cream scooper, scoop together the dough onto the baking sheet. It will make approximately 10 cookies.
Bake in the oven for around 12-14 minutes. Let them cool for a few minutes and then they are ready to serve. Enjoy!
