You're As Sweet As Pie

Dulce de Leche Cookie Pies

Growing up, it was almost a tradition to have dulce de leche anything so I knew I had to bake something with it. These sweet treats are very rich but worth it!

  • 1 1/2 Cups of Flour
  • 1/2 Cup of Brown Sugar
  • 1 TSP of Vanilla Extract
  • 1 TSP Baking Powder
  • 1 Cup of Sugar
  • 2 Eggs
  • 1/4 Cup of Confectioner’s Sugar
  • 1 Cup of Peanut Butter
  • 1/4 Cup of Unsalted Butter
  • Dulce De Leche Milano Cookies

Before starting, grab a cupcake pan, liners and preheat the oven to 350. In two separate bowls, have the dry ingredients mixed together which includes the flour, brown sugar, sugar, and the baking powder. In another bowl, whisk together the vanilla, eggs, and the butter. Pour in the dry into the wet mixture and combine it all. Once this is done, break apart several milano cookies into pieces and put into the batter. Then with a spoon, mix it all together. Afterwards, with an ice cream scooper, scoop up the mix into the cupcake liners. Bake for around 15 to 20 minutes. Watch them so they do not over bake or go over the liners.

While cooling, in a mixing bowl, with an electric mixer, whisk together the peanut butter and confectioner’s sugar until smooth. Once done, grab a spoonful and put in the middle of the cookie pie. Then add a half of the milano cookie on top for presentation. Hope you enjoyed these sweet treats as much as I did!
