I don’t know about you but it has been hot very hot here in Florida. In this case, I wanted to cool down with a sweet dessert for myself and others who are suffering with this summer heat. These are delicious homemade cupcakes with banana ice cream to top it off.
You can look back onto my past recipe for the banana ice cream to compliment the cupcake.
- 1 1/3 Cups of Flour
- 1 TSP of Baking Powder
- 1/2 TSP Baking Soda
- Salt to taste
- 2 Eggs
- 3/4 Cups of Sugar
- 1 TSP of Vanilla
- 1/4 Cup of Vegetable Oil
- 4 Banana Split Oreos
- 1/4 Cup of Strawberry Preserves
- 2 TBSPs of Unsalted Butter
- Chocolate Syrup
- Whipped Cream
Let’s start by preheating the oven to 350, grabbing two cupcake pans, and cupcake liners. In one mixing bowl, mix together the sugar, salt, flour, baking soda, and baking powder. Then with an electric mixer, mix together the eggs, vegetable oil, and vanilla. After it is smooth, add in the strawberry preserve and after the preserve is mixed in, pour in the dry ingredients.
Once this step is complete, break apart the oreos and mix them into the batter. Scoop the batter onto the cupcake trays and liners and bake for around 14 minutes.
Have the cupcakes cool for a few minutes and then serve warm with the banana ice cream, chocolate syrup, whipped cream and sprinkles. I hope you enjoy this cupcake sundae during this summer season!
