Pumpkin Chocolate Chip Muffins

I know it is a little early to start baking sweets with pumpkin but I love pumpkin so why not? I had recently gotten pumpkin butter at a farm and wanted to make something with it. These muffins are pretty easy and they are quite yummy.  Plus there’s no rule on when you can use pumpkin in food and I am glad I decided to bake these!

Fall is a great time of year once it starts cooling down plus my birthday is in October along with Halloween which is one of my favorite holidays next to 4th of July and Christmas. I am sure you wanted to learn those facts about myself right now haha. Anyways, can’t you tell that I am a little excited for fall?!

Here is what you’ll need:

1 1/2 Cups of Flour

1 1/3 Cups of Sugar

Dash of Cinnamon

Dash of Nutmeg

Salt to Taste

1 TSP Baking Soda

1 TSP Baking Powder

2 Eggs

1/4 Cup of Vegetable Oil

2 Cups of Pumpkin Butter

1/2 Cup of Chocolate Chips

In one bowl, mix together the flour, sugar, cinnamon, nutmeg, baking soda, baking powder and salt. In a separate mixing bowl, whisk together the pumpkin butter, vegetable oil, and eggs. Add in the dry ingredients and with an electric beater, beat both batters together.

Preheat the oven to 350 and bake for around 25 minutes. Scoop the batter into the muffin tins and you are all set to bake them. This batch makes around 2 1/2 dozen muffins.
