You're As Sweet As Pie


What better way to treat yourself mid-week with some delicious and easy to make buckeyes?! I’m not sure if y’all could tell but I love peanut butter and chocolate. It is even better when the both are together.


1 Cup of Peanut Butter

1/3 Cup of Unsalted Butter

1 1/2 Cups of Swerve (replacement sugar)

1/2 TSP of Vanilla Extract

1 1/3 of Ghirardelli Semi-Sweet Chocolate Chips

In a bowl, mix together the peanut butter, butter, vanilla extract and replacement sugar. Melt the chocolate chips in a small pot over low medium heat and stir frequently until smooth. Roll the batter into balls, dip into melted chocolate and place on a cookie sheet along with waxed paper.

Keep in mind, you can still use regular confectioner’s sugar. I just like using swerve. It has the same texture and feel for regular confectioner’s. It is just MY preference.

Put in the freezer for around 25-30 minutes then they are ready to munch on!
