I’m back! As you all know, I was on a family vacation in the Bahamas the past couple weeks. We luckily have our own house there so a lot of time was spent in the kitchen. I have a few recipes to share with you and this is one of them!
Sweet Potatoes with Jack Daniel’s Honey Glaze
Cut the potatoes into wedges or wheels and place on a baking sheet pan. Add some cinnamon and butter to each piece and bake in the oven at 350 for around 30 to 45 minutes or until tender.
For the honey glaze, mix together three shots of sugar, two shots of Jack Daniel’s Honey, teaspoon of cayenne and cinnamon. Bring this mixture to a boil and then have it simmer for a couple minutes.
When the potatoes are done, pour the glaze on them and put them back in the oven for 5 minutes. Let them cool for a couple minutes and they are ready to serve.
Roasted Bell Pepper Chicken
Now for the chicken, use chicken breasts and add salt, pepper, seasoning of your choice and olive oil. Slice the chicken open and add roasted bell peppers into the chicken.
Bake the chicken at 350 in the oven for around 40 minutes. Place the chicken, potatoes over some grits and you’ll have yourself a tasty meal. Enjoy!
