Hope you had a great weekend and Sunday! Maybe all this rain will stop and it will finally start to feel a little more like fall. I decided to bake some pumpkin brownies because who doesn’t like pumpkin or brownies?!
They are sweet and easy to make. If you warm them up and have them with ice cream, it is the perfect treat!
3/4 Cups of Unbleached flour
1/2 tsp of baking powder
Salt to taste
3 tbsps of unsalted butter
1 cup of white sugar
2 tsps of vanilla extract
1/4 cup of cocoa powder
1/2 cup of pumpkin purée
Pumpkin pie spice to taste
Nutmeg to taste
Handful of Pumpkin spice morsels
In one mixing bowl, mix together the dry ingredients: flour, sugar, baking powder, salt, cocoa powder, nutmeg, and pumpkin pie spice.
The second bowl, mix the wet: pumpkin purée and vanilla first then add in the eggs and butter. Mix in the dry ingredients once the batter is smooth.
Add in the pumpkin morsels and mix with a spoon. Spray pan with the coconut oil and pour the batter into the pan. Sprinkle on some chocolate chips and put in the oven at 350 for around 35 to 40 minutes.
