I have a confession and I can’t stop baking. I’ve been trying to get rid of my flour, sugar, cocoa powder, etc so I don’t have to make such unhealthy desserts. Sounds crazy right?!
Well I made these brownie cupcakes and they are pretty good. They are also easy to make and you should have most of it in your pantry to begin with. Valentine’s Day is around the corner so I thought these would be a good idea to bake for friends or a boyfriend.
What you’ll need:
1 cup of flour
1/2 cup of light brown sugar
1/2 cup of sugar
1/2 cup of cocoa powder
2 vegetarian eggs
8 tablespoons of soy free earth balance butter (your preference)
1 teaspoon of vanilla extract
1 tablespoon of almond milk
Pink and red sprinkles
Let’s start off by preheating the oven to 350, grabbing a cupcake pan, and cupcake liners. In two separate bowls, mix the dry ingredients together which consists of the flour, sugars and cocoa powder.
In another bowl, mix the wet ingredients including the eggs, butter and vanilla. Add this mixture to the dry ingredients and mix the batter until smooth while adding in the almond milk. Scoop the batter and place in the cupcake tin. Then sprinkle some sprinkles and chocolate chips into the cupcake batter.
Place the pan into the oven and bake for around 23 minutes. Let them cool and then they are ready to serve! Enjoy!!
