Good morning! Hope y’all are having a fabulous start to your work week. I wanted to share with you a recipe I found and made that is pretty simple and easy to make! I have Ann Romney’s cookbook and even though I’m not the best cook out there, her recipes are pretty simple.
I’ve made cookies, cake, sweet potatoes and more from her book. This salad is refreshing and really delicious for any time of the year. If you love mangoes then you’ll enjoy this meal very much.
- 2 ripe mangoes, peeled and diced
- 2 medium tomatoes, chopped
- 2 avocados, diced
- 1/2 bunch cilantro, chopped
- 2 limes
I was only missing the cilantro since I forgot to put that on my grocery list for some reason! I used cherry tomatoes since I’m not a huge tomato person but tomatoes are tomatoes so doesn’t make too much of a difference … or does it?! ha.
Anyways, all you need to do is combine the chopped mango, tomatoes, avocados, and cilantro together. Squeeze the juice of the limes and mix it up! Let me know if you end up making this salad and what you think.
