Rosemary Chicken w/Mashed Cauliflower Potatoes

Happy Tuesday! I have been on a cooking roll the past couple months and wanted to share with y’all a pretty good meal I made the other night. It’s pretty simple to make. 

The cauliflower mashed potatoes is actually from Angela’s cookbook Oh She Glows. It is so yummy! 


  • 1 Piece of Chicken
  • Rosemary 
  • Parsley Flakes
  • Olive Oil
  • Cooking Spray
  • Grape Tomatoes
  • 1/2 Pound of Yukon Potatoes
  • 1 Head of Cauliflower

For The Chicken and Tomatoes: 

  • Spray your pan with cooking spray (I prefer coconut oil spray) then add a tablespoon of olive oil
  • Set the stovetop to medium high heat
  • Rinse the thawed out chicken, add the Rosemary and some parsley flakes 
  • Slice a few grape tomatoes and place onto the pan along with the chicken 
  • Make sure the chicken is cooked thoroughly and not pink on the inside 

Cauliflower Mashed Potatoes 

  • Boil Yukon potatoes in a pot until soft at medium heat (feel free to peel the potatoes if you want to but not needed)
  •  Add in bite size cauliflower pieces from the cauliflower head and let it boil together till it softens some more 
  •  Take the batch off the heat and mash it up
