I love baking and decided to make something to snack on that was sweet for the next couple days. So why not have peanut butter chocolate chip cookies?! I’m also trying to get rid of all of the baking ingredients in my place so it won’t go to waste…of course!
What you’ll need:
- 1/2 cup of smart balance crunchy peanut butter
- 1/2 cup of earth balance butter
- 1/4 cup of sugar
- 1/2 cup of light brown sugar
- 1 brown vegetarian egg
- 1/2 tsp of vanilla extract
- 1/2 tsp of baking soda
- Salt to taste
- 1 1/4 cups of all purpose flour
- 1/2 cup of chocolate chips
In a mixing bowl, using an electric beater, mix in the butter and peanut butter until smooth (I melted the butter). Then add in the sugars, egg and vanilla and eventually the flour, sugar and baking soda. Once the batter is smooth, add the chocolate chips and mix in with your hands.
Scoop the batter with an ice cream scooper onto the pan. Bake at 375 for around 10 minutes. Bakes around 18 cookies depending how big you scoop the dough!
