I’m too addicted to baking lately but at least I get to share it with you all! I decided to make these cupcakes the other night while watching the hockey finals for the Stanley Cup. If you don’t already know, the Tampa Bay Lightning are in the finals and it has been super exciting!
Hopefully they can pull a W tomorrow night and we can play just one more game to finally win the cup!! Anyways this recipe is super easy and here’s what you’ll need.
- 5 to 6 tablespoons of earth balance butter
- 1/4 cup of cocoa powder
- 3/4 cup of all purpose flour
- 1/2 tsp of baking powder
- 1 cup of light brown sugar
- 3 vegetarian brown eggs
- 1 tsp of almond extract
- Cupcake liners
In two separate bowls, mix together the sugar, eggs and butter. I had melted the butter for 15 seconds or so in the microwave to make it easier for baking. Then in a second bowl, mix the rest of the dry ingredients together. Combine all of the ingredients and mix until smooth. Then add in the almond extract to mix into the batter. After it is all combined, scoop a good handful to pour into the cupcake pan.
Bake at 350 for around 20 minutes then they’re ready to serve! Feel free to add icing or whatever your little heart desires 😉
