The title of this post is a handful but they are so delicious that I just had to share my recipe! I have the pumpkin spice cookie butter from Trader Joe’s and I wanted to bake something from it so why not cookies?!
This recipe is super easy to make and perfect for fall. The pumpkin isn’t really an overpowering taste either. In case someone isn’t a huge pumpkin person, you can let them know that. Anywho, here is what you’ll need!
- 2 cups of flour
- 3/4 cups of white sugar
- 1/4 cup of organic brown sugar
- 1 tsp baking soda
- 1 tsp baking powder
- Salt to taste
- 2 eggs
- 4 tablespoons of butter (I used earth balance which is non dairy)
- Handful of chocolate chips
- 1/2 cup of almond butter (I used Justin’s)
- 1/2 cup or more of pumpkin spice cookie butter
Melt the butter and then add it to a bowl with the sugars. Mix until smooth. Afterwards, add in the butters and when that is smooth, add in the flour, eggs, baking powder, baking soda, and salt.
Mix in the chocolate chips with your hands then in spoonfuls, place the dough onto a pan. Bake at 350 for around 13 minutes. Let it cool for a bit and they’re ready to serve!
