A Cake for My Peeps 

Hi everyone! I hope you had a great weekend and Easter with family and friends. For Easter, I actually made a lovely little peep cake with my mom and it was quite delicious. With that being said, I wanted to share the recipe with you all! 
The cake bar was rich, decadent and really darn good. Pretty easy to make as well. 

Recipe 
For the cookie layer: 
1/2 cup unsalted butter, softened
4 egg yolks 
1 egg
1 15.25 yellow cake box mix
1/4 cup of sprinkles
For the fudge layer: 
1 14 ounce can sweetened condensed milk 
3 1/2 cups white chocolate chips 
1 1/2 teaspoons vanilla extract 
3 packages of peeps
1/4 cup sprinkles 
1/4 cup of pastel m&ms 
To make the cookie layer: preheat oven to 325. Spray baking dish with nonstick cooking spray. Using a hand mixer, beat butter on medium high in large bowl until soft and fluffy for 2 minutes. Add egg yolks and egg and beat until incorporated for additional 2 minutes. 
Add cake mix in 3 stages over low speed and then fold in sprinkles. Bake for 16 to 20 minutes turning dish halfway through cook time until edges turn golden brown. Take out from oven and it let it cool. 
To make fudge layer: Fill a large saucepan with an inch of water. Set a large heatproof mixing bowl on top, and add condensed milk, white chocolate chips and vanilla extract to bowl. Heat on high stirring occasionally, until chocolate is melted and smooth. Remove from heat and pour over cookie layer. 
While fudge is wet, garnish with peeps, sprinkles and candy. Let it cool completely and then cut into squares.
