Oh my goodness thank goodness the weekend is here and we all got to sleep in today. Am I right?! I am glad I am with family and enjoying myself instead of at a desk right now. But who knows maybe some people would rather be at a desk on this lovely Saturday!
Anyways, you didn’t come here to here me ramble on about nonsense. Let me get to the good stuff. I recently came upon a yummy pancake recipe from Jessica Sepel. They are super easy to make and actually good for you. Pancakes that are good for you? Say what?! Yep, I just did.
It just takes a few ingredients and then you’re set to go. Sounds easy right? Well let’s get started.
- 1/2 cup of oats ( I used gluten free)
- 1 egg which is optional but I used it in mine
- 1 tsp baking powder
- 1 tbsp of chia seeds
- 1/2 banana
- Cinnamon
- 1/4 cup of almond milk
Blend until smooth and then pour on a pan on medium heat. Top it off with anything you’d like. I did mine with dairy free chocolate chips and syrup. Enjoy xx

I got the recipe from Jessica Sepel. She has awesome and easy recipes to follow! But I have other posts that I have come up with myself as well 😉
