Hi and happy Saturday! So glad it’s the weekend. It was pretty awesome to sleep in this morning, I’m not gonna lie. I also got to finally make this easy pasta dish last night for dinner and just had to share it with you all. It was easy and so yummy. I got the recipe from The Skinny Confidential blog by Lauryn Evarts.
It’s a pretty simple recipe and easy to do. Most ingredients you should have in your pantry. So here is what you’ll need. Oh it is spicy and I love spice so totally up to you on how much to add into it!
- Red lentil pasta
- Veggies which Lauryn used broccoli and tomatoes but I did a veggie mix with a tomato
- Extra virgin olive oil
- Nutritional yeast
- Pink Himalayan salt
- Minced garlic
- Chili flakes
- Lemon juice
Bring pot of water to a boil, add pasta and cook it with directions on the box. After the pasta is cooked and drained, mix in veggies, tomato, oil, yeast, salt, flakes and lemon juice. I just did a dash of each and half a bag of frozen veggies and mixed it all together. Then it’s ready to serve! Let me know what you think of the recipe.
