Recipe of The Day: Butternut Squash, Basil & Apple & Chicken Sausage Casserole

Good morning and happy weekend y’all! I am so glad I got to sleep in today and get some rest that was much needed. I recently came upon a butternut squash, breakfast sausage and sage casserole recipe from paleomg.com. But I tweaked it a bit since I didn’t quite have the exact ingredients. So below is what I did and it still turned out just as delicious! 

  • 2 cups of butternut squash 
  • 1 tbsp of basil 
  • Coconut oil 
  • Salt tt
  • Pepper tt
  • 1 pound of Chicken and apple sausage
  • 10 eggs 
  • 2 tbsp of butter {I used non dairy kind} 

Preheat the oven to 400 and grease an 8 by 8 pan with coconut oil. In a bowl, mix the squash, salt to taste and butter together. Put it in the oven for around 25 minutes. 

Once that is in the oven, cut up the sausage and sauté in a pan with oil until cooked. In another bowl, whisk the eggs together then add in the sausage, basil, salt, pepper and squash once cooked. Place it all in the pan and lower the oven to 350. Then bake for 35 minutes. Let it cool for a few minutes then it is ready to serve. Enjoy! 

Oh and my pets decided to join me in the kitchen except this food was their mama and not them 😉
