Sooo my sister recently sent me a vegan b & j cupcake recipe and I knew I had to try it. They were really easy to make and made with their vegan ice cream!
- 1 1/2 cups of all purpose flour
- 1 tbsp of coconut oil
- 1/2 cup of sugar
- 1 tsp baking powder
- 1 tsp salt
- 1/2 cup coconut oil melted
- 1 pint of chocolate fudge brownie vegan ice cream
Preheat the oven to 350 and put the liners in the cupcake pan. In one bowl, mix together the dry ingredients and combine.
Add the melted Ben and Jerry’s pint and coconut oil. Scoop around a 1/4 of the batter into pan and bake for 20 to 22 minutes. Let it cool and ready to serve!
I improvised their recipe that consisted of coconut layer bar with the chocolate brownie ice cream to be more sweet. I also used Gluten free flour. And it allll still turned out just fine. Here’s the link to the original recipe I found and tweaked 😉
