Hi! It’s been awhile that I’ve been wanting to post this delicious recipe for you all. It’s a yummy cobbler from Katie Lee’s Endless Summer Cookbook. Super easy to make! I made it before Irma hit Florida so we had something to munch on.
Here’s what you’ll need:
- 4 cups of sliced peaches
- 1 cup of blueberries
- 1 1/2 tsp fresh lemon juice
- 1 cup of sugar
- 1 cup of all purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 cup of milk
- 4 tbsps of unsalted butter, melted
- 1 tbsp of cornstarch
- 1/2 cup boiling water
Preheat the oven to 325. Put the peaches and blueberries in a 10 inch cast iron skillet and toss with lemon juice.
In a medium bowl, whisk together 3/4 cup of sugar, flour, baking powder and salt. Add the milk and melted butter and mix with a rubber spatula until ingredients are just blended. Pour batter evenly over the peaches and blueberries.
In a small bowl, whisk together remaining 1/4 cup sugar and cornstarch. Sprinkle the sugar mixture across the batter then pour boiling water evenly over the top of batter, moistening all of sugar mixture. Bake for 55 to 60 minutes until golden brown and bubbling. Remove from ove and place on cooling rack to set for ten minutes. Serve warm.
