Hi and happy Monday! Can’t believe another weekend went by. Seriously way too quickly! And my birthday is less than a week away. I can’t believe I’ll be a year older… eek!
Anyways, I found this yummy recipe for breakfast from Living Lou Blog. It’s easy and perfect to make and have to warm up in the mornings before work. If you’re like me and hate breakfast then this is perfect for ya.
- 8 cups of egg bread cut into 1″ cubes
- 6 eggs
- 2 cups of milk
- 1 tsp vanilla extract
- 1 1/2 tsp cinnamon, divided
- 2 tbsp unsalted butter
- 2 Granny Smith apples, sliced
- 1/4 cup walnuts optional
- 2 tbsp brown sugar
Preheat the oven to 375. Arrange bread in 9×13 oven proof casserole dish. In a large bowl, whisk together eggs, milk, vanilla and 1 tsp of cinnamon and pour over bread, pressing bread down to soak in the liquid.
Meanwhile, melt butter in a non stick medium frying pan over medium high heat. Add apples and cook for 4 minutes, stirring occasionally. Add in walnuts, brown sugar and remaining 1/2 tsp of cinnamon and cook for 2 minutes.
Pour apples on top of bread pressing down with a spoon to arrange evenly and press apple slices into cracks. Bake in center of oven for 20 to 25 minutes.
