Hi there. If you have the Tuesday blues like you realizing it’s only second day of the work week then this post is for you. It will brighten your day since this little recipe is tasty and not hard at all to make!
I’ll leave this post short and sweet for you since you’re probably working or something like that 😉
- 6 eggs (I actually used fresh eggs from chickens from a co worker meaning nothing added to chicken totally fresh!!)
- Italian sausage (1)
- Baby greens mix
- Nutritional yeast
- Chipotle flakes
- Feta cheese
- Garlic salt
Whisk the eggs and add it to the pan. I would recommend using an 8×8. I made the mistake of using too big of a pan so it came out a little thin but it was still yummy! Slice up the sausage and add them in along with everything else. I sparingly used the greens mix, salt, feta and everything in between.
Just use it to your tasting and that’s how it always works out! Bake in the oven at 350 for 22 minutes or until cooked. You would be able to tell for sure if it’s cooked/baked and make sure you don’t over-bake.
Nutritional yeast adds even a little more of a healthy cheesy taste and it’s not too spicy at all. If you’re thinking that with what is added in it. Also, in case you were wondering about the eggs, they do taste differently then store bought. Considering it is all natural, they tasted more savory and fresh if that makes sense. Hard to explain but I got lucky with these and I’m hoping my new co worker will bring in more of these eggs!
