Hello and happy weekend! I know it’s been a couple weeks so I am back. I promise I’ll be putting out more content in the upcoming weeks. Didn’t realize how busy this month was until it creeped up on us LOL.
Anyways, I wanted to try and make something new for myself as a meal and it didn’t fail which was great. Super easy to make and you should have the ingredients in your kitchen. I made veal the other night and I actually really liked it. I don’t think I’ve had it before or at least made it myself so it was cool to cook myself and try out.
As a side, I made eggplant and spinach sautéed in cinnamon. I know it sounds weird but it actually tasted fine. I’ve actually been roasting veggies in cinnamon too and it gives them a sweeter taste. Y’all should try it and let me know your thoughts. Plus cinnamon is a good anti – inflammatory and high in antioxidants 😉
Ok what you’ll need:
- Italian seasoning
- Truffle oil
- Olive oil
- Avocado cooking spray or something other than your regular pam that’s filled junk ha
Mix together the oils and dashes of seasonings on the veal. Put onto your 8 inch pan that is sprayed with your avocado oil. Bake at 350 for 30 minutes.
All you have you to do for eggplant and spinach is to sauté it in the pan greased and with dash of cinnamon for five minutes or so until cooked. I used frozen eggplant so it took few minutes more to thaw out too.
This lasted me for like three days of lunch at work too which was good but now I don’t want to see veal or eggplant for a bit ha.
