Baked Egg Casserole

Monday blues got you down? Don’t you worry, I got you! I came up with a little concoction of an egg casserole and I am not gonna lie, it is pretty good. Mind you, I did eat it for few days or so in a row. Breakfast, dinner, lunch..yep, anytime of the day!

If you saw my previous blog post on the French toast, well you’re in luck because I am actually using a part of that recipe in this one. So basically use any leftover of the batter in this mix.

Pour the leftover batter from the French toast into a pan and add in more egg whites, bacon and sausage. Obviously, I like my meats like a LOT. The sausage I got from Usinger’s in Wisconsin but obviously you can use what you have.

I put another dash of cinnamon and pumpkin pie spice in it just because. I mean it’s that time of year so go for it! Bake at 350 for around 20 minutes. Let it cool for few minutes then it is ready to serve šŸ˜‰
