Have a holly jolly Christmas… with these cookies! Helloooo my loves. I come with you today with these tasty cookies. I was recreating my old red velvet cookies I have on my blog from four years ago and ended up with chocolate peppermint cookies that tasted like brownies.
Soo good and easy to make. I wasn’t sure how they would come out but I ate like four of them fresh the oven so if that doesn’t say anything then I don’t know what does ha. Anyways, they are also gluten and dairy free and still tasty. The icing, I did not make and it was store bought so it’s not really healthy or anything. I’m not going to sit here and tell you that it is!!
You can totally make your own icing or buy a different kind though. That was just easier for me to do. I mean it still tastes just as good with or without icing. Whatever floats your boat!
So here’s what you’ll need:
- 2 cups of almond flour (I used amoretti)
- 1 cup of coconut sugar
- Pink Himalayan salt to taste
- 3 tbsp of cacao powder
- 8 tbsps of ghee
- 1 tsp of peppermint extract
- 2 tsps of vanilla extract
- Egg whites (equivalent to two eggs)
- 2 tbsps of soy milk
- 1 tsp of baking soda
- 1/2 cup of cacao nibs
- Red icing (I just store bought mine, generic)
