Pumpkin Brownies

Sunday funday with this tasty treat! Super easy to make and yummy. Or at least I think so 😉

They’re also gluten and dairy free which is even better. Easy to make and that’s why I am sharing it with you today. Most of ingredients you should have in your pantry too. I’m off to yoga and brunch so I will keep this post short and sweet!

What you’ll need:

  • 1/2 cup of almond flour
  • 1 egg (I used egg whites as same amount for an egg)
  • 1/4 tsp of baking soda
  • Pink Himalayan salt to taste
  • 1/4 cup of cacao powder
  • 1 cup of coconut sugar
  • 1/3 cup of ghee
  • 1/2 cup of pumpkin purée
  • 1/4 cup of soy milk
  • 1 tsp of vanilla extract
  • 2 tablespoons of baking powder
  • Dash of pumpkin pie spice

Pumpkin drizzle/icing:

  • 1/4 cup of pumpkin purée
  • 1/4 cup of coconut butter
  • Tablespoon of coconut butter
  • Mix wet and dry ingredients in separate bowls. Then with an electric beater, mix together both wet and dry together. Use coconut oil spray on an 8×8 pan or loaf pan to bake at 350 for around 23-25 minutes.
  • For the icing, mix together while brownies are baking and drizzle on as you’d like once brownies are cooled down.
